Ingredients:


  1. 500g Basmati rice
  2. 1 kg bone-in chicken, cut into pieces
  3. 1 large onion, finely chopped
  4. 1 tbsp ginger paste
  5. 1 tbsp garlic paste
  6. 2 tbsp biryani masala
  7. 2 bay leaves
  8. 2 black cardamom pods
  9. 4 green cardamom pods
  10. 4 cloves
  11. 1 cinnamon stick
  12. 1 tsp cumin seeds
  13. 1 tsp coriander seeds
  14. 1 tsp red chili powder
  15. 1/2 cup plain yogurt
  16. 2 tbsp ghee or oil
  17. 1/4 cup milk
  18. A pinch of saffron
  19. Salt to taste
  20. Fresh cilantro leaves for garnish
  21. Fried onions for garnish (optional)

Instructions


Rinse the Basmati rice several times in cold water and soak it in water for at least 30 minutes. Soaking helps to soften the rice and reduce the cooking time.

In a large pot, heat the ghee or oil over medium heat. Add the bay leaves, black cardamom pods, green cardamom pods, cloves, cinnamon stick, cumin seeds, and coriander seeds. Stir for a few seconds until the spices release their aroma.

Add the chopped onion and fry until it turns golden brown. This helps to add sweetness and depth of flavor to the dish.

Add the ginger and garlic paste and fry for a minute. This will enhance the taste and aroma of the spices.

Add the chicken pieces, biryani masala, and red chili powder. Stir well and cook for 5-7 minutes until the chicken is slightly browned. The spices will coat the chicken pieces and create a delicious flavor.

In a small bowl, soak the saffron in the warm milk for a few minutes. This step will infuse the milk with the aroma and color of saffron.

Preheat the oven to 180°C (350°F). The oven will be used to bake the biryani later.

In a large oven-safe dish, layer the half-cooked rice and the chicken curry alternately. Start and end with a layer of rice. This will create distinct layers of chicken and rice.

Pour the saffron milk over the top of the rice. This will add a golden color and fragrance to the dish.

Cover the dish with aluminum foil and bake in the oven for 20-25 minutes until the rice is fully cooked. The baking process will help to steam the biryani and cook the rice thoroughly.
